No, you are not dreaming, it is real. These snickers will change your vegan life the second you try them. They are so good!!! And very very close to the original version for me. My kids are addicted to these beauties and I cannot wait for you all to try them out.
It is so much fun for me creating healthy treats that are plantbased. You could skip the chocolate part and make your own chocolate with cocoa coconut oil and coconut butter but I prefer store bought, vegan chocolate for this one.
100g almond meal
3 tbsp maple syrup
200g cashews, soaked in hot water for at least two hours, drained and rinsed
100ml coconut oil, melted
1 tbsp cashew butter
3 tbsp coconut cream (thick part on top of the coconut milk can)
70g peanuts, salted
2 tbsp peanut butter, creamy
200g soft dates, soaked in hot water for 20 min, drained and rinsed
2 tbsp coconut oil, melted
350g vegan chocolate
3 tbsp coconut oil, melted
- Step 1 Mix all ingredients for the base together in a food processor until smooth.
Line loaf tin with parchment paper. pour base-mix into it evenly and freeze fir at least an hour.
- Step 2
Add all ingredients for the peanut-caramel layer except the peanuts, to a food processor and blend until smooth and no date pieces are visible anymore.
- Step 3
Take the loaf tin out of the freezer, pour the caramel into the loaf tin over the base and now add peanuts on top of it and spread them evenly, so the caramel layer is not visible anymore and you can only see the peanuts on top fully covered.
- Step 4
Push the peanuts slighty with your flat hands into the caramel and freeze over night or at least 6 hours.
- Step 5
Take out the freezer and cut the loaf into 6-8 bars. Melt chocolate together with the coconut oil and use one fork and one spoon to cover the bars with chocolate.
- Step 6 Put all on a plate and freeze for another 30 minutes. Enjoy.
