Walnut-Date Banana Bread

For all of you banana bread fans out there, you will love this one! I play with around with banana bread from time to time because there are so many ways to make. This time I wanted it to be more chunky and more moist than the usual banana breads are.

This vegan and healthy walnut-date banana bread version is my favorite so far and it is really hard for me to imagine, that there is someone not falling in love with it.

Go banana with your bread

Get your bananas and be creative. If you want it more chocolaty, get some raw cocoa powder or chocolate. If you want to make it more fruity, add blueberries or strawberries. If you want it to be gluten free, use almond or buckwheat flour. Go to your kitchen and have fun experimenting, your kids will love it.

Banana-Walnut-Date Bread

  • 80g medhool dates
  • 3 ripe medium size bananas
  • 200g plain white flour
  • 1/2 cup coconut oil
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 100g walnuts
  • 2 tsp chia seeds
  • 4 Tbs almond milk
  • some coconut oil to grease loaf tin
  • Step 1Preheat oven to 180 celsius
  • Step 2
    Grease loaf tin with coconut oil, set aside
  • Step 3
    Take 5-6 walnuts and about 4 dates and set both aside. Cut rest of walnuts and dates into small pieces
  • Step 4
    In a medium bowl mix together dry ingredients, in another bowl mix together coconut oil, almond milk
  • Step 5 bananas and dates
  • Step 6
    Now carefully add the wet mixture into the dry one just until combined. Do not over mix, you want to have it a chunky structure
  • Step 7
    Add chopped walnuts and mix with a fork a few times through
  • Step 8
    Pour the batter into the loaf tin and add leftover walnuts and dates on top. Eventually sprinkle coconut sugar on top. Bake for 15-20 minutes. It should still be a little sticky and moist in the middle
  • Step 9
    Let cool for 20 minutes and enjoy
